Prep and transfer the design

Pick a large, evenly round pumpkin with a smooth face and a flat resting spot so it sits steady on a bench. Cut a small access hole in the bottom rather than the top so the stem stays intact and the shell up front is uninterrupted. Scrape the inside wall on the carving face down to about an inch thick so your relief cuts have room to work. Tape your moose stencil in place and poke or trace the main outlines: the antler spread, the head, the muzzle, and the dewlap.

Rough out the antler paddles

Start with the widest, boldest shapes, the two antler paddles fanning out on each side. Use a ribbon loop tool to peel the skin off the paddles so they glow a shade lighter than the background shell. Leave the outer edges of the paddles slightly raised and rounded so they catch daylight. Keep thin points connected to the main paddle so nothing snaps off, since these are the most fragile parts.

Block in the head and muzzle

Move to the face and establish the big planes first: the brow, the long muzzle, and the bulbous nose. Peel the muzzle and nose to a medium depth so they sit forward as the brightest part of the face. Round the nose gently with a small gouge and undercut just beneath it to throw a shadow. Work slowly from shallow to deep so you can always go deeper, never shallower.

Layer the fur and dewlap

Switch to a small V-gouge for the coat. Pull short, overlapping strokes down the neck and cheeks so the fur reads as many layered clumps rather than smooth skin. Carve the hanging dewlap a touch deeper at its base to separate it from the neck. Vary your pressure so some strands are barely scratched and others are deeply grooved, which is what creates the sculpted look.

Add the eye and refine shadows

Set the eye deep under the brow with a rounded gouge, since a recessed eye reads as alive while a raised one looks flat. Go back over the whole face and deepen the transitions where the muzzle meets the fur and where the antlers meet the skull. Undercut a few key edges so they cast their own small shadows in daylight. Step back often to check the depth reads from a few feet away.

Clean up and stage the photo

Brush out loose pulp with a dry paint brush and wipe the surface clean. This design is built for daylight, so set it on a porch bench where afternoon sun rakes across the relief and shows every layer. If you want a subtle evening version, tuck a warm LED nearby rather than inside, since a light indoors would wash out the sculpted shadows. Rub cut edges with a little petroleum jelly to slow browning and keep it looking fresh.
